 Ingredients:

  • Potatoes (4-5 medium-sized), peeled and cut into cubes
  • Onion (1 large), chopped
  • Tomatoes (2 medium-sized), chopped
  • Ginger paste (1 tablespoon)
  • Garlic paste (1 tablespoon)
  • Cumin powder (1 teaspoon)
  • Coriander powder (1 teaspoon)
  • Red chili powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Garam masala powder (1/2 teaspoon)
  • Bay leaf (1)
  • Salt (to taste)
  • Sugar (1 teaspoon)
  • Mustard oil (3 tablespoons)
  • Water (1 cup)
  • Chopped coriander leaves (for garnishing)

Instructions:

  • Heat the mustard oil in a pan and add the bay leaf. Fry for a few seconds until it starts to release its aroma.
  • Add the chopped onions and fry until they turn translucent.
  • Add the ginger and garlic paste and fry until the raw smell disappears.
  • Add the chopped tomatoes and fry until they are cooked and mushy.
  • Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, salt, and sugar. Mix well and fry for a minute.
  • Add the cubed potatoes and mix well with the masala. Fry for 2-3 minutes until the potatoes are coated with the spices.
  • Add a cup of water and mix well. Cover the pan with a lid and cook until the potatoes are soft and tender. Keep stirring occasionally.
  • Once the potatoes are cooked, garnish with chopped coriander leaves and serve hot with steamed rice or roti.
