Ingredients:
- Potatoes (4-5 medium-sized), peeled and cut into cubes
- Onion (1 large), chopped
- Tomatoes (2 medium-sized), chopped
- Ginger paste (1 tablespoon)
- Garlic paste (1 tablespoon)
- Cumin powder (1 teaspoon)
- Coriander powder (1 teaspoon)
- Red chili powder (1 teaspoon)
- Turmeric powder (1/2 teaspoon)
- Garam masala powder (1/2 teaspoon)
- Bay leaf (1)
- Salt (to taste)
- Sugar (1 teaspoon)
- Mustard oil (3 tablespoons)
- Water (1 cup)
- Chopped coriander leaves (for garnishing)
Instructions:
- Heat the mustard oil in a pan and add the bay leaf. Fry for a few seconds until it starts to release its aroma.
- Add the chopped onions and fry until they turn translucent.
- Add the ginger and garlic paste and fry until the raw smell disappears.
- Add the chopped tomatoes and fry until they are cooked and mushy.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, salt, and sugar. Mix well and fry for a minute.
- Add the cubed potatoes and mix well with the masala. Fry for 2-3 minutes until the potatoes are coated with the spices.
- Add a cup of water and mix well. Cover the pan with a lid and cook until the potatoes are soft and tender. Keep stirring occasionally.
- Once the potatoes are cooked, garnish with chopped coriander leaves and serve hot with steamed rice or roti.
