Ingredients:
- 1 kg mutton, cut into small pieces
- 1 cup ghee
- 1 cup milk
- 1 cup yogurt
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 2 tsp red chili powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- Salt, to taste
- A pinch of saffron
- A handful of sliced almonds, for garnish
- A handful of chopped coriander leaves, for garnish
Instructions:
- Heat ghee in a heavy-bottomed pan or kadhai over medium heat.
- Add the mutton pieces and fry until they turn golden brown on all sides.
- Remove the mutton from the pan and set it aside.
- In the same pan, add the ginger and garlic paste, and fry until they turn golden brown.
- Add the red chili powder, coriander powder, cumin powder, turmeric powder, and salt. Mix well and fry for a minute.
- Add the fried mutton to the pan and mix well with the masala.
- Add the yogurt and mix well. Cook for 10-15 minutes, stirring occasionally.
- Add milk to the pan and mix well. Cover the pan and simmer until the mutton is cooked through and tender.
- Once the mutton is cooked, add a pinch of saffron and mix well.
- Garnish with sliced almonds and chopped coriander leaves before serving.
- Serve hot with rice or any Indian bread of your choice.
