 Ingredients:

  • 1 kg mutton, cut into small pieces
  • 1 cup ghee
  • 1 cup milk
  • 1 cup yogurt
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • Salt, to taste
  • A pinch of saffron
  • A handful of sliced almonds, for garnish
  • A handful of chopped coriander leaves, for garnish

Instructions:

  • Heat ghee in a heavy-bottomed pan or kadhai over medium heat.
  • Add the mutton pieces and fry until they turn golden brown on all sides.
  • Remove the mutton from the pan and set it aside.
  • In the same pan, add the ginger and garlic paste, and fry until they turn golden brown.
  • Add the red chili powder, coriander powder, cumin powder, turmeric powder, and salt. Mix well and fry for a minute.
  • Add the fried mutton to the pan and mix well with the masala.
  • Add the yogurt and mix well. Cook for 10-15 minutes, stirring occasionally.
  • Add milk to the pan and mix well. Cover the pan and simmer until the mutton is cooked through and tender.
  • Once the mutton is cooked, add a pinch of saffron and mix well.
  • Garnish with sliced almonds and chopped coriander leaves before serving.
  • Serve hot with rice or any Indian bread of your choice.
