Papad ki Sabzi: A Tangy and Spicy Delight from Rajasthan

 Ingredients:

  • 6-7 papads (thin and crispy)
  • 2 medium-sized onions, finely chopped
  • 1 large tomato, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • Oil for cooking
  • Water as needed
  • Fresh coriander leaves for garnishing

Instructions:

  • Break the papads into bite-sized pieces and keep aside.
  • Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
  • Add chopped onions and green chilies and sauté until the onions turn translucent.
  • Add ginger-garlic paste and sauté for a minute.
  • Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook until the tomatoes turn soft and mushy.
  • Add water as needed to adjust the consistency of the gravy. Bring it to a boil.
  • Now, add the broken papad pieces to the gravy and mix well.
  • Cook for 2-3 minutes until the papad pieces absorb the flavors of the gravy and become soft.
  • Garnish with fresh coriander leaves and serve hot with roti or rice.
