Ingredients:
- 6-7 papads (thin and crispy)
- 2 medium-sized onions, finely chopped
- 1 large tomato, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- Salt to taste
- Oil for cooking
- Water as needed
- Fresh coriander leaves for garnishing
Instructions:
- Break the papads into bite-sized pieces and keep aside.
- Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions and green chilies and sauté until the onions turn translucent.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook until the tomatoes turn soft and mushy.
- Add water as needed to adjust the consistency of the gravy. Bring it to a boil.
- Now, add the broken papad pieces to the gravy and mix well.
- Cook for 2-3 minutes until the papad pieces absorb the flavors of the gravy and become soft.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
