 Ingredients:

  • 2 cups of all-purpose flour (maida)
  • 1 tsp salt
  • 2 tbsp oil or ghee
  • Warm water, as needed
  • Oil for deep frying

Instructions:

  • In a large mixing bowl, add the all-purpose flour and salt. Mix well.
  • Add oil or ghee to the flour mixture and mix it in with your fingers until it resembles coarse crumbs.
  • Gradually add warm water to the mixture and knead it into a smooth dough. The dough should be soft and pliable, but not sticky. You may need more or less water depending on the flour.
  • Once the dough is ready, cover it with a damp cloth and let it rest for 15-20 minutes.
  • Heat oil in a deep frying pan over medium heat.
  • Divide the dough into small balls (around the size of a lemon).
  • Roll each ball into a flat disc using a rolling pin. The disc should be around 4-5 inches in diameter and ¼ inch thick.
  • Gently drop the disc into the hot oil and press it down with a slotted spoon. This will help it puff up.
  • Fry the luchi until it is golden brown on both sides. This should take around 1-2 minutes per luchi.
  • Remove the luchi from the oil using a slotted spoon and place it on a paper towel-lined plate to absorb any excess oil.
  • Repeat the process with the remaining dough balls.
Your delicious Luchi - Deep fried puffed bread is now ready to be served with any curry or side dish of your choice. Enjoy!
