Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions:
- Preheat the oven to 375°F.
- Place the flour in a shallow dish. In another shallow dish, beat the eggs.
- In a third shallow dish, mix together the breadcrumbs, Parmesan cheese, oregano, basil, garlic powder, salt, and black pepper.
- Dredge each chicken breast in the flour, shaking off any excess. Then dip each breast into the beaten eggs, and then coat in the breadcrumb mixture.
- Heat some olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side, until golden brown. Transfer the chicken to a baking dish.
- Pour the marinara sauce over the chicken breasts, making sure each breast is well-coated. Sprinkle shredded mozzarella cheese over the top.
- Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before serving. Garnish with fresh basil leaves, if desired.
