Ingredients:
- 1 loaf Italian bread or baguette, sliced
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 4 ripe tomatoes, chopped
- 1/4 cup fresh basil leaves, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat oven to 400°F.
- In a small bowl, mix together olive oil and minced garlic.
- Arrange bread slices on a baking sheet and brush each slice with garlic olive oil.
- Bake for 5-8 minutes, or until the bread is golden brown and crisp.
- In a separate bowl, mix together chopped tomatoes, basil, salt, and black pepper.
- Once the bread is out of the oven, top each slice with the tomato mixture.
- Sprinkle grated Parmesan cheese over the top.
- Serve immediately.
