Recipe of Shahi Paneer

 Ingredients:

  • 200g paneer, cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 cup cashews, soaked in hot water for 10-15 minutes
  • 1 inch piece of ginger, grated
  • 3-4 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 cup heavy cream
  • 2 tbsp ghee or butter
  • Salt, to taste
  • Fresh coriander leaves, chopped

Instructions:

  • In a blender, grind the soaked cashews into a fine paste. Keep it aside.
  • Heat ghee or butter in a pan on medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  • Add chopped tomatoes and cook until they are soft and mushy.
  • Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix everything together and cook for another minute or two.
  • Add the cashew paste and mix everything together. Cook for another minute or two.
  • Add heavy cream and mix everything together. Cook for another minute or two.
  • Add the cubed paneer to the gravy and mix everything together. Let it cook for a few minutes until the paneer is heated through.
  • Garnish with fresh coriander leaves and serve hot with rice or naan.
