Ingredients:
- 200g paneer, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 cup cashews, soaked in hot water for 10-15 minutes
- 1 inch piece of ginger, grated
- 3-4 garlic cloves, minced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 cup heavy cream
- 2 tbsp ghee or butter
- Salt, to taste
- Fresh coriander leaves, chopped
Instructions:- In a blender, grind the soaked cashews into a fine paste. Keep it aside.
- Heat ghee or butter in a pan on medium heat. Add cumin seeds and let them splutter.
- Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Add chopped tomatoes and cook until they are soft and mushy.
- Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix everything together and cook for another minute or two.
- Add the cashew paste and mix everything together. Cook for another minute or two.
- Add heavy cream and mix everything together. Cook for another minute or two.
- Add the cubed paneer to the gravy and mix everything together. Let it cook for a few minutes until the paneer is heated through.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
