Ingredients:
- 2 cups whole wheat flour
- 1 cup boiled and mashed potatoes
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- Salt to taste
- 2 tbsp finely chopped coriander leaves
- 2 tbsp ghee (clarified butter)
- Water as needed
Instructions:
- In a mixing bowl, combine the wheat flour, salt, and water to form a soft dough. Knead the dough for about 5 minutes until it becomes smooth and pliable. Cover and let the dough rest for 10-15 minutes.
- In another bowl, mix the mashed potatoes, cumin seeds, coriander powder, turmeric powder, red chili powder, salt, and coriander leaves until well combined.
- Divide the dough and the potato mixture into equal-sized balls.
- Take one ball of dough and roll it into a small circle. Place one ball of the potato mixture in the center of the circle.
- Gather the edges of the circle and bring them together to cover the potato filling. Flatten it out and roll it into a circular paratha.
- Heat a griddle or tawa on medium heat. Place the paratha on the griddle and cook for 2-3 minutes until the bottom starts to turn golden brown.
- Flip the paratha and spread a little ghee on top. Cook for another 2-3 minutes until the other side also turns golden brown.
- Repeat the process with the remaining dough and potato mixture.
- Serve the Aloo Parathas hot with a side of yogurt or pickle.
