Ingredients:

  • 2 cups whole wheat flour
  • 1 cup boiled and mashed potatoes
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • Salt to taste
  • 2 tbsp finely chopped coriander leaves
  • 2 tbsp ghee (clarified butter)
  • Water as needed

Instructions:

  1. In a mixing bowl, combine the wheat flour, salt, and water to form a soft dough. Knead the dough for about 5 minutes until it becomes smooth and pliable. Cover and let the dough rest for 10-15 minutes.
  2. In another bowl, mix the mashed potatoes, cumin seeds, coriander powder, turmeric powder, red chili powder, salt, and coriander leaves until well combined.
  3. Divide the dough and the potato mixture into equal-sized balls.
  4. Take one ball of dough and roll it into a small circle. Place one ball of the potato mixture in the center of the circle.
  5. Gather the edges of the circle and bring them together to cover the potato filling. Flatten it out and roll it into a circular paratha.
  6. Heat a griddle or tawa on medium heat. Place the paratha on the griddle and cook for 2-3 minutes until the bottom starts to turn golden brown.
  7. Flip the paratha and spread a little ghee on top. Cook for another 2-3 minutes until the other side also turns golden brown.
  8. Repeat the process with the remaining dough and potato mixture.
  9. Serve the Aloo Parathas hot with a side of yogurt or pickle.

Enjoy your delicious homemade Aloo Paratha!
