Ingredients:
- 2 cups poha (flattened rice flakes)
- 1/2 cup chopped onion
- 1/2 cup chopped potatoes
- 1/2 cup frozen green peas
- 1/4 cup roasted peanuts
- 2-3 green chilies, finely chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- 2 tbsp chopped coriander leaves
- Lemon wedges for garnish
Instructions:
- Rinse the poha in a colander under running water until it becomes soft. Drain the water and set it aside.
- Heat the oil in a pan or wok on medium heat. Add the mustard seeds and cumin seeds and let them splutter.
- Add the chopped onion and green chilies and sauté for a few minutes until the onions turn translucent.
- Add the chopped potatoes and green peas and stir-fry for 2-3 minutes until they are slightly cooked.
- Add the turmeric powder, red chili powder, garam masala powder, and salt to the pan and mix well.
- Add the rinsed poha to the pan and stir well until all the ingredients are well combined.
- Cover the pan and cook for 2-3 minutes on low heat until the poha is heated through and the vegetables are fully cooked.
- Add the roasted peanuts and chopped coriander leaves to the pan and mix well.
- Serve the hot Poha garnished with lemon wedges.
