Recipe of Kimchi jeon

 Ingredients:

  • 1 cup of all-purpose flour
  • 1 cup of water
  • 1 egg
  • 1 cup of chopped kimchi
  • 1/2 cup of chopped scallions
  • 1 tbsp of sesame oil
  • Salt and black pepper, to taste
  • Vegetable oil, for frying

Instructions:

  • In a mixing bowl, whisk together the flour, water, egg, sesame oil, salt, and black pepper until smooth.
  • Add the chopped kimchi and scallions to the batter and mix well.
  • Heat a large non-stick skillet over medium-high heat and add enough vegetable oil to cover the bottom.
  • Spoon about 1/4 cup of the batter onto the skillet and spread it out into a thin, even layer using a spatula.
  • Cook the pancake for 2-3 minutes on each side, or until golden brown and crispy.
  • Transfer the pancake to a paper towel-lined plate to drain excess oil. Repeat with the remaining batter.
  • Cut the kimchi jeon into bite-sized pieces and serve with soy sauce or a dipping sauce made with soy sauce, vinegar, and a pinch of sugar. Enjoy!
Kimchi jeon can be made with other types of vegetables, such as zucchini, mushrooms, or sweet potato. You can also add some seafood, such as shrimp or squid, for a richer flavor.
