 Ingredients:

  • 4 sheets of roasted seaweed
  • 4 cups of cooked short-grain rice
  • 4 oz of cooked ham or beef, sliced into thin strips
  • 2 oz of spinach, blanched and drained
  • 2 oz of carrots, julienned and stir-fried
  • 2 oz of yellow pickled radish, julienned
  • 2 eggs, beaten and cooked into thin omelets
  • 1 tbsp of sesame oil
  • 1 tbsp of soy sauce
  • 1 tbsp of sugar
  • Salt and black pepper, to taste

Instructions:

  • Place a sheet of seaweed on a bamboo rolling mat with the shiny side facing down.
  • Spread about 1 cup of cooked rice evenly over the seaweed, leaving a 1-inch border at the top edge.
  • Drizzle some sesame oil over the rice and sprinkle some salt and black pepper on top.
  • Arrange the cooked ham or beef, blanched spinach, stir-fried carrots, yellow pickled radish, and omelet strips on top of the rice.
  • Mix the soy sauce, sugar, and a drizzle of sesame oil in a small bowl, then brush it over the ingredients in the center of the rice.
  • Starting from the bottom edge, tightly roll the seaweed and rice around the fillings using the bamboo mat. Wet the top border with a little bit of water to seal the roll.
  • Repeat with the remaining sheets of seaweed and fillings to make 4 rolls in total.
  • Use a sharp knife to slice the rolls into bite-sized pieces.
  • Serve the gimbap with soy sauce or a dipping sauce made with soy sauce, vinegar, and a pinch of sugar. Enjoy!
Gimbap can be customized with various fillings such as tuna, crab meat, cucumber, avocado, or kimchi. You can also use a different type of rice, such as brown rice or mixed grain rice, to make it healthier.
