Ingredients:
- 3 lbs beef short ribs, cut into 2-inch pieces
- 1 cup soy sauce
- 1 cup water
- 1/2 cup brown sugar
- 1/4 cup mirin
- 1/4 cup rice wine
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp sesame oil
- 1 tbsp ginger, minced
- 2-3 green onions, chopped
- 1/4 tsp black pepper
- 1 tbsp toasted sesame seeds (optional)
Instructions:
- Soak the beef short ribs in cold water for 30 minutes to remove any blood.
- Drain the water and rinse the ribs well. Pat them dry with paper towels.
- In a bowl, whisk together soy sauce, water, brown sugar, mirin, rice wine, onion, garlic, sesame oil, ginger, and black pepper to make the marinade.
- Place the beef short ribs in a large pot or dutch oven, and pour the marinade over the ribs. Make sure the ribs are fully submerged in the marinade.
- Cover the pot and refrigerate for at least 4 hours, or overnight.
- After marinating, bring the pot to a boil over medium heat.
- Once it starts boiling, lower the heat to medium-low and let it simmer for about 2-3 hours, until the beef is tender and falls off the bone.
- Add the chopped green onions and toasted sesame seeds (optional) as a garnish.
- Serve hot with steamed rice and your favorite side dishes.
