 Ingredients:

  • 3 lbs beef short ribs, cut into 2-inch pieces
  • 1 cup soy sauce
  • 1 cup water
  • 1/2 cup brown sugar
  • 1/4 cup mirin
  • 1/4 cup rice wine
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2-3 green onions, chopped
  • 1/4 tsp black pepper
  • 1 tbsp toasted sesame seeds (optional)

Instructions:

  • Soak the beef short ribs in cold water for 30 minutes to remove any blood.
  • Drain the water and rinse the ribs well. Pat them dry with paper towels.
  • In a bowl, whisk together soy sauce, water, brown sugar, mirin, rice wine, onion, garlic, sesame oil, ginger, and black pepper to make the marinade.
  • Place the beef short ribs in a large pot or dutch oven, and pour the marinade over the ribs. Make sure the ribs are fully submerged in the marinade.
  • Cover the pot and refrigerate for at least 4 hours, or overnight.
  • After marinating, bring the pot to a boil over medium heat.
  • Once it starts boiling, lower the heat to medium-low and let it simmer for about 2-3 hours, until the beef is tender and falls off the bone.
  • Add the chopped green onions and toasted sesame seeds (optional) as a garnish.
  • Serve hot with steamed rice and your favorite side dishes.
