Ingredients:
- 2 cups heavy cream
- 1/2 cup sugar
- 1 vanilla bean, split lengthwise and seeds scraped
- 2 1/4 teaspoons powdered gelatin
- 3 tablespoons cold water
- Fresh berries or fruit, for serving
Instructions:
- In a saucepan, heat the heavy cream, sugar, and vanilla bean and seeds over medium heat until the sugar dissolves, stirring occasionally.
- Remove the saucepan from the heat and let it steep for about 10 minutes. Discard the vanilla bean.
- In a small bowl, sprinkle the gelatin over the cold water and let it soften for 5 minutes.
- Warm the cream mixture over medium heat and add the gelatin mixture, stirring until the gelatin dissolves.
- Pour the mixture into six ramekins and let it cool to room temperature.
- Cover the ramekins with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
- To serve, run a knife around the edge of each ramekin and invert onto a serving plate. Serve with fresh berries or fruit.
