Recipe of Sabudana Khichdi

Ingredients:

  • 1 cup sabudana (tapioca pearls)
  • 1/2 cup roasted peanuts, crushed
  • 1 medium-sized potato, peeled and cubed
  • 2-3 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp ginger, grated
  • 1 tsp lemon juice
  • 2 tbsp ghee (clarified butter)
  • Salt, to taste
  • Fresh coriander leaves, chopped


 Instruction:

  • Rinse the sabudana in cold water a few times, then soak it in enough water to cover the pearls for at least 3-4 hours or overnight. Once soaked, drain off the excess water and set aside.
  • Heat ghee in a pan on medium heat. Add cumin seeds and let them splutter.
  • Add chopped green chilies, grated ginger, and sauté for a few seconds.
  • Add the cubed potato and sauté until it's cooked and golden brown.
  • Add the soaked sabudana, crushed peanuts, and salt. Mix everything together and cook on low heat for 5-7 minutes, stirring occasionally.
  • Add lemon juice and fresh coriander leaves and give it a final mix.
  • Serve the Sabudana Khichdi hot, garnished with some more coriander leaves and roasted peanuts if desired.
