Ingredients:
- 1 cup sabudana (tapioca pearls)
- 1/2 cup roasted peanuts, crushed
- 1 medium-sized potato, peeled and cubed
- 2-3 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp ginger, grated
- 1 tsp lemon juice
- 2 tbsp ghee (clarified butter)
- Salt, to taste
- Fresh coriander leaves, chopped
Instruction:
- Rinse the sabudana in cold water a few times, then soak it in enough water to cover the pearls for at least 3-4 hours or overnight. Once soaked, drain off the excess water and set aside.
- Heat ghee in a pan on medium heat. Add cumin seeds and let them splutter.
- Add chopped green chilies, grated ginger, and sauté for a few seconds.
- Add the cubed potato and sauté until it's cooked and golden brown.
- Add the soaked sabudana, crushed peanuts, and salt. Mix everything together and cook on low heat for 5-7 minutes, stirring occasionally.
- Add lemon juice and fresh coriander leaves and give it a final mix.
- Serve the Sabudana Khichdi hot, garnished with some more coriander leaves and roasted peanuts if desired.
