Ingredients:

  • 4 large flour tortillas
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup diced potatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheese
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Salsa, guacamole, and sour cream (optional)


Instructions:

  1. Heat a large skillet over medium heat. Add the olive oil and diced potatoes. Cook for 5-7 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  2. Add the onion and bell pepper to the skillet with the potatoes. Cook for 2-3 minutes until the vegetables are softened.
  3. Add the black beans to the skillet and cook for another 2-3 minutes until the beans are heated through.
  4. In a separate bowl, whisk together the eggs and milk. Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  5. Warm the tortillas in the microwave for 10-15 seconds until they are soft and pliable.
  6. Spoon the egg and vegetable mixture into the center of each tortilla, then top with shredded cheese.
  7. Fold the sides of the tortilla towards the center, then roll it up tightly into a burrito.
  8. Serve the breakfast burritos with salsa, guacamole, and sour cream if desired.
