Ingredients:
- 1 pound boneless, skinless chicken breasts, sliced into strips
- 2 bell peppers, sliced into strips
- 1 large onion, sliced into strips
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning (store-bought or homemade)
- 8-10 flour tortillas
- Toppings: guacamole, salsa, shredded cheese, sour cream, chopped cilantro
Instructions:
Preheat your oven to 350°F.
In a large bowl, combine the chicken strips, sliced peppers, sliced onions, minced garlic, olive oil, and fajita seasoning. Toss until everything is well coated.
Heat a large skillet over high heat. When the skillet is hot, add the chicken and veggie mixture and sauté for about 5-7 minutes or until the chicken is cooked through and the veggies are tender-crisp. Remove from heat.
Place the flour tortillas on a baking sheet and warm them in the preheated oven for about 5 minutes or until they are soft and pliable.
Assemble the fajitas by placing a few spoonful of the chicken and veggie mixture on each tortilla. Top with guacamole, salsa, shredded cheese, sour cream, and chopped cilantro, as desired.
Roll up the tortillas, tucking in the ends to form a neat bundle. Serve immediately and enjoy!
Note: You can also cook the chicken and veggies on a grill instead of a skillet for an even more flavorful and smoky taste. Additionally, you can use any type of meat or veggies that you prefer for your fajitas.
