Recipe of Haemul pajeon

 Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup potato starch or corn starch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 1/4 cups ice-cold water
  • 2 cups of seafood (shrimp, squid, scallops, etc.), chopped
  • 1 cup green onions, cut into 2-inch pieces
  • 2 tbsp vegetable oil
For dipping sauce:
  • 3 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • 1 tbsp water
  • 1/2 tsp red pepper flakes
  • 1 clove garlic, minced

Instructions:

  • In a large mixing bowl, whisk together the flour, potato starch or corn starch, baking powder, and salt.
  • Add the beaten egg and ice-cold water to the dry ingredients and whisk until the batter is smooth.
  • Add the chopped seafood and green onions to the batter and mix well.
  • Heat a non-stick pan over medium-high heat and add 1 tbsp of vegetable oil to the pan.
  • Pour about 1/2 cup of the batter into the pan and spread it out evenly into a circle.
  • Cook the pancake for 3-4 minutes or until the bottom is golden brown.
  • Flip the pancake over and cook for another 3-4 minutes until the other side is golden brown as well.
  • Remove the pancake from the pan and place it on a plate. Repeat the process with the remaining batter.
  • To make the dipping sauce, mix together the soy sauce, vinegar, sugar, water, red pepper flakes, and minced garlic in a small bowl.
  • Cut the pancake into small pieces and serve with the dipping sauce on the side.
Haemul Pajeon can also be made with other vegetables such as carrots, zucchini, or peppers. Enjoy!
